About Hibiki
In February 1899, Shinjiro Torii opened a store in Osaka, Japan, that traded in imported wines. Within a decade, Torii began producing his own sweet grape wine called Akadama Port Wine, which became wildly popular throughout the country. In 1923, Torri — fascinated by whisky his entire life — decided to expand his business and began constructing the Yamazaki Distillery, Japan's first-ever whisky distillery.Although inspired by traditional Scottish distilleries, Torii envisioned a uniquely Japanese approach to whisky and chose a location for his distillery that offered a climate and terrain utterly different from those of Scotland. Nestled on the periphery of Kyoto, Yamazaki Distillery is situated at the confluence of three rivers — the Katsura, Uji, and Kizu — that provide the warm, damp environment ideal for the production and maturation of whisky.
Fifty years after the construction of Yamazaki Distillery, Keizo Saji inherited his father's vision and constructed Suntory's second distillery. Situated amidst the deep forests of Mount Kaikomagatake in Japan's southern Alps, the Hakushu Distillery enjoys a unique microclimate as a result of being surrounded by nearly 6,000 varieties of plants and thousand-year-old granite rocks.
About Japanese Whisky
Although maybe not be the first Spirit you would think of when Japan is mentioned; the Japanese make one of the best types of whisky in the world. It’s heavily influenced by scotch but with smoother and delicate notes.
The history of the Japanese whisky is not even a century old, but in this short time, the Japanese blended and single malts have taken over the world by storm and can easily go against their whisk(e)y counterparts from across the globe.

High West 21 Year Old Rocky Mountain Rye Whiskey
About High West 21 Year Old Rocky Mountain Rye Whiskey
High West Rocky Mountain Rye 21 Year Old isn’t technically rye whiskey since it wasn’t aged in new, but rather refill barrels. But it is whiskey distilled from rye. It’s also incredibly rare for an American whiskey to reach such age. The thing is, this impressive spirit is almost extinct, so finding a bottle is almost Ethan Hunt’s level of impossible. Its character is sweet, hot, and spicy. Pretty spectacular stuff.Don't miss the opportunity to own this wonder!
About High West
Situated at the bottom of the Quitting Time Ski Run in Park City, High West Distillery & Saloon is the first distillery in Utah since Prohibition and the only ski-in gastro-distillery in the world. "We wanted to call High West a "saloon," says David Perkins, High West's founder, "because we wanted to pay homage to the history of saloons in the old West and the important role they played in each and every town that had one. The saloon was the main meeting place where town hall was held, important announcements were made, and people went to eat and drink. We want people to share that sense of community and friendship over High West."About Rye
As American as the bald eagle, rye whiskey was first brewed in the American Northeast in the 1600s. Even George Washington distilled it after leaving the Oval Office, so there’s no way of denying its origin.
It’s distinguished from bourbon for its original and unique spicy notes.
By law, rye whiskey must be made from at least 51% rye grain, aged in new and charred oak barrels for at least two years, and bottled at no more than 62,5% ABV.

Highland Park 1968 Orcadian Vintage Single Malt Scotch Whisky
About Highland Park 1968 Orcadian Vintage Single Malt Scotch Whisky
Situated in the Orkney archipelago in Northern Scotland, Highland Park Distillery was founded in 1798 by Magnus Eunson. The name of the distillery is derived not from the region of Scotland known as The Highlands — the Orkney islands are not a part of The Highlands — but rather from the region known as High Park, where the distillery was founded.Today, over two centuries after its founding, Highland Park Distillery remains one of the few Scottish distilleries that continues to hand-turn, malt, and peat its own barley. “You have to be careful here on the malting floor,” says Eric Tait, Highland Park's Maltman. “You find it can get a wee bit slippery underneath. I have to turn the malt every eight hours to prevent the roots getting tangled and to get it all aerated properly. The airing also helps it to grow. The malt will be on the floor for seven days and I'm running five floors at the moment.”
After malting the barley, Highland Park Distillery smokes it using peat sourced from Hobbister Moor, a peat bog located approximately seven miles from the distillery. Hobbister Moor peat is sourced from floral heather bushes, which burn hotter and cleaner than the grassy peats of Islay. In addition, the peat sourced from Hobbister Moor has greater derivatives of carbohydrates and a lower concentration of lignin than peat from Islay, giving Highland Park's peat a unique chemical fingerprint. The peat sourced from Hobbister Moor is “absolutely fundamental” in understanding the flavor of Highland Park Whisky, says Russell Anderson, the distillery manager. Together with Orkney's unique environment (the temperate, moist climate of the archipelago results in an even maturation process), the peat gives Highland Park Whisky its traditional malty, coastal flavors tempered by just a subtle touch of smoke.
Highland Park 1968 Year Old Single Malt Scotch Whisky is the second release in the esteemed Orcadian Vintage series. Crafted from just eight hogshead barrels which were previously used for maturing Oloroso Sherry, the whisky was bottled in 2009, allowing four decades of weather on the Orkney Islands to exert its influence over the whisky. With its aromatic, heather-infused peat flavor, Highland Park 1968 represents a unique combination of smoky and sweet that has not p reviously been seen from Highland Park.
Highland Park 1968 Year Old Single Malt Scotch Whisky has a bright, clean aroma of straw and salty sea air, which leads to a fruit-forward palate filled with lemon tart, plums, honey, cloves and just a hint of oak. The finish is equally compelling, with accents of toasted marshmallows and coconuts, as well as refreshing mint.
Only 1,550 bottles (at 91.2 proof) of this magnificent whisky, which earned 93 points from Whisky Advocate, were ever made. Pick up a bottle today!
About Scotch
Scotch is the most popular whisky in the world and is considered the king of them all! There are five whisky regions in Scotland (six if you count the not officially recognized Islands), and each of them produces spirits with unique properties and distinct tasting notes. (The type of grain used determents the type of the scotch.)
Malt whisky is made of malted barley, and grain whisky uses other grains like corn or wheat. Most of the time, a whisky is blended from different distilleries hence the name blended scotch, but if a malt whisky is produced in a single distillery, we get something extraordinary called a single malt.

Highland Park 21 Year Old August 2019 Release
About Highland Park 21 Year Old August 2019 Release
Situated in the Orkney archipelago in Northern Scotland, Highland Park Distillery was founded in 1798 by Magnus Eunson. The name of the distillery is derived not from the region of Scotland known as The Highlands — the Orkney islands are not a part of the Highlands — but rather from the region known as High Park, where the distillery was founded. Highland Park is an incredible longstanding whisky house, and they pride themselves on their rich Norse heritage, an essence that is reflected in their craft.Today, over two centuries after its founding, Highland Park Distillery remains one of the few Scottish distilleries that continues to hand-turn, malt, and peat its own barley, using locally cut peat from the nearby Hobbister Moor. The malt is peated to 20 parts per million phenols, and then mixed with unpeated malt produced on the Scottish mainland.
The peat is "absolutely fundamental in understanding the flavor of Highland Park Whisky," says Russell Anderson, the distillery manager. Together with Orkney's unique environment (the temperate, moist climate of the archipelago results in an even maturation process), the peat gives Highland Park Whisky its traditional malty flavors that are tempered by an ever-so-subtle touch of smoke.
The August 2019 release of the premium Highland Park 21 Year Old had Master Whisky Maker Gordon Motion choose 3 different casks: first-fill sherry seasoned European Oak casks, first-fill sherry seasoned American oak casks, and refill casks. A total of just 15 casks went into this intense yet balanced expression. The first-fill casks take the center stage w ith the European oak bringing spice and dried fruit, the American oak ones adding vanilla and citrus. The whisky is bottled at 92 proof.

Highland Park 31 Year Old Single Malt Scotch Whisky
About Highland Park 31 Year Old Single Malt Scotch Whisky
'Sláinte!' to family traditions as sacred as collecting rare whiskeys. The Perfect Fifth came about when one such American family decided it was time to start bottling the world's best Whiskey with the intent to share it with like-palated people. 'The Perfect Fifth scours casks all over Scotland to find the magnum opus of each distillery.' All in the name of arriving at the perfect equilibrium of taste that is a spectacular sensory experience in every release. The bottle in question comes from the masters of refined brutality - the Orkney distilling legends Highland Park. Tough people in tough conditions who are doing true (Norse) gods' work - producing harmonious, fragrant, aromatic whiskey. The proof is in the heater-heavy ancient peat, the sharp wind, and the work ethic for this islander. Delivering single cask malt expressions that are the stuff of myth, mystery, and (easier to prove) scotch-mastery.This extraordinary expression is a smudge peatier than the next Highland Park dram. Aged in Sherry casks, this 31-years-old is delicious, rare, and comes in a perfectly designed bottle - 1 of only 185 ever made. It's silky when it hits the palate, initially smokey, oily, and sweet, with exotic fruitiness serving as the silver lining. The nose is long, spicy, and closes with phenols. Make this bottle the first violin of your already perfectly orchestrated collection.

Highland Park Freya 15 Year Old Single Malt Scotch Whisky
About Highland Park Freya 15 Year Old Single Malt Scotch Whisky
Highland Park distillery was founded by Whisky smuggler Magnus Eunson in 1798 and legend has it that he used his position as a church officer to conceal Whisky beneath the pulpit to keep it out of sight of interfering governmental types. What we do know for sure is that Highland Park is the northerly most distillery in Scotland — sitting way out on the island of Orkney in the far North Sea, just below the Arctic Circle. It’s as close to Iceland as it is to London.Because the name is “Highland Park,” it may be easy to think that means their whisky is made in the Highland style. But it’s quite different. In character, their spirit is closer to a midpoint between Lowland style and peated Islay single malts. And it’s signature style and dedication to superior quality keep it broad range of whiskies in high demand. In fact, spirits journalist and whisky legend Michael Jackson called Highland Park, “The greatest all-rounder in the world of malt whisky.”
Highland Park Freya was the third in a four-part Valhalla Series of limited edition single malts named after Norse deities — this one released in 2014. It’s a lightly peated and delicate dram aged fifteen years in ex-sherry casks. Freya was the Norse goddess of love, beauty, gold, and war. Highland Park obviously took the naming seriously, delivering a golden-hued dram with a luscious palate and lovely, complex flavor profile. But do not sell this goddess short… at 51.2% ABV it’s a powerful dram.

Highland Park Ice Edition 17 Year Old Single Malt Scotch Whisky
About Highland Park Ice Edition 17 Year Old Single Malt Scotch Whisky
Situated just a few miles north of Scotland's mainland, the Orkney archipelago was occupied by a number of different nomadic and belligerent tribes for centuries. In 875, however, the islands were annexed by Norway and settled by the Norse, who began using the archipelago as a base for Viking raids across Europe. In 1468, the islands were pledged by King Christian I of Norway as a dowry to James III of Scotland, and since then, the islands connection with Scotland has been perpetual. Highland Park Distillery is situated in Kirkwall — the capital of the Orkney islands — and was founded in 1798 by Magnus Eunson. The name of the distillery is derived not from the region of Scotland known as The Highlands (the Orkney islands are not a part of The Highlands) but rather from the region known as High Park, where the distillery was founded.Highland Park Odin is the final of four releases in the Valhalla Collection available from Highland Park Distillery. Odin pays homage to the eponymous Norse god, the dominant Allfather and King of Asgard known for his furious and intensely complex character. According to the distillery, “Odin is the strongest of all the Norse gods and driven by an unquenchable thirst for wisdom. By sacrificing an eye for a drink from the Well of Wisdom, he earned immeasurable knowledge and insight. With only one eye which blazes like the sun, Odin cuts an ominous figure.”
Highland Park Ice Edition 17 Year Old Single Malt Whisky is made from lightly peated barley, which is mashed and fermented before being twice distilled through Highland Park's copper-pot stills. Following distillation, the whisky is matured for 17 years in American oak ex-bourbon casks, a rarity for the distillery. The whisky itself is straw gold in color with an aroma of baked pineapple, honeyed graham cracker, grated ginger, and campfire smoke. Notes of baking spice and tropical fruits appear on the palate over a layer of smoke, and lead to an earthy finish.
Celebrated with the Chairman's Trophy and a score of 99/100 upon its release, only 17,000 of these bottles will ever be released globally.

Highland Park Loki is the second of four releases in the Valhalla Collection available from Highland Park. Named for one of the most treacherous and mischievous characters in Norse mythology, Loki is a 15 year-old limited edition single malt whisky that was matured in both sherry casks and casks that were previously used to mature heavily peated whisky.
The whisky, much like the god it pays homage to, is intriguing and complex, and is housed in an award-winning wooden frame that echos the fearsome contours of a traditional Viking ship. While it has an aroma of citrus and spice, the palate is robust and chewy, with notes of intense smoke and hints of dried fruits. The smoke fades to notes of licorice and chocolate, and finishes with a touch of cloves, cinnamon, vanilla and hickory smoke.
"While everyone will recognize the definite "˜Highland Park-ness' of this 15 year old single malt," says Gerry Tosh, the marketing manager at Highland Park Distillery, "it will be the unexpected and surprisingly smoky dynamics that will really get palates excited and mouths talking. This is unlike any expression that has come before and will beguile and fascinate with its complexity and trickery."
Highland Park Loki Single Malt Scotch Whisky earned a score of five stars from F. Paul Pacult's Spirit Journal, which rated it one of the top thirty spirits in the world.

The unique peat gives Highland Park Whisky its traditional malty flavors that are tempered by just a subtle touch of smoke.
This collection features both The Dark and The Light expressions of the two-part series that celebrates the Orkney climate and the distinctive influence it has on its whiskies. The Dark is an award-winning 17-year-old single malt Scotch whisky that has been matured in first-fill European oak sherry seasoned casks, delivering a distinctly deep flavor, packed with ripe cherries, toasted almonds, and dark chocolate overlaid with hints of smoky peat.
The Light is matured exclusively in refill American oak casks, highlighting the bright and fruity side of the legendary Highland Park spirit with flavors of creamy vanilla, baked pear, and nutmeg that meld luxuriously with rich aromatic smoke. Bottled in a beautifully embossed green gl ass vial, its serpent dragon design is inspired by the great Norse sagas, embracing both the high sun of the summer solstice and the low sun of the winter solstice. Both of these expressions have earned the coveted Double Gold medal at the San Francisco World Spirits Competition.
